Cinnamon Coconut Fat Bombs

Committing to a low carb diet wasn’t something I particularly struggled with, however upping my fat intake to balance out my diet along with trying to get into Ketosis is something I found rather difficult for the simple reason, most of my low carb meals are naturally low in fat.  Along with that it also took me a while to adjust my mindset and get over the social prejudice instilled in us for decades that fat is inherently bad for you, I mean researching low carb recipes and seeing something called “fat bombs” – instantly alarm bells start ringing right?

Fortunately I am slowing adjusting to a higher fat content in my diet and these bad boys (along with these bad boys!) have helped me do just that.  I have to warn you though, I’m not sure if its the cinnamon, but I find these to be extremely moorish..  So if you find yourself eating 2 in a single sitting – don’t blame me! 😀  Enjoy!

Cinnamon Fat Bombs
Prep Time 5 minutes
Passive Time 15 minutes

4 fat bombs
Ingredients
  • 100 g Creamed coconut
  • 3 tsp Cinnamon
  • 1 tbsp Dessicated coconut
  • 1/5 tsp Stevia
  • 1 tsp Vanilla Essence
  • Handful Cacao nibs (Optional)
Instructions
  1. Line a cupcake tray with 4 cupcake holders.
  2. Gently soften half of the creamed coconut in the microwave, one minute on high should be sufficient.
  3. Spoon roughly two teaspoons of the mixture into each cupcake holder, evenly covering the bottom.
  4. Put the tray in the freezer for 5 minutes for the mixture to set.
  5. In the meantime, gently soften the other half of the creamed coconut in the microwave like before.
  6. Mix in cinnamon, stevia, vanilla essence & desscated coconut.
  7. Once it's been 5 minutes, take the tray out of the freezer and spoon the cinnamon mixture evenly into each cupcake holder.
  8. Put the tray back into the freezer for 5 minutes for the cinnamon mixture to set.
  9. Once time is up, take the tray back out and spoon the remaining creamed coconut evenly on top of the set mixture.
  10. Put the tray back into freezer a final time for 5 minutes.. And then.... Enjoy!
