Protein Banana Pancakes

This one became a bit of a staple for me and I’ve had to tone it down a bit as of late being that banana’s are not exactly low carb πŸ™ˆ

That being said after a tough leg day, this makes for a nice quick and easy protein punch!

Protein Banana Pancakes
Prep Time 2 minutes
Cook Time 5 minutes
Servings
1 pancake
Ingredients
  • 2 eggs
  • 2 egg whites
  • 1/2 scoop your favourite protein powder (I use Optimum Nutrition)
  • 1/2 - 1 medium banana (I'll do half to lessen the carbs but a whole banana really brings out the flavour)
Instructions
  1. Put all the ingredients into a blender and blend until they're thoroughly mixed. (If you don't have a blender whisk the eggs and protein powder, mash up banana by hand and then whisk that into the egg mixture.)
  2. Put a saucepan on medium heat and spray with your favourite non stick oil or butter (I go for coconut oil).
  3. Pour in the mixture and cook for 1 - 2 mins.
  4. Flip the pancake and cook for 30 seconds - 1 minute more.
  5. Top with some berries if you fancy and enjoy!
